It frees the queen and the bishop to attack the weak F7 square, gives the king space, controls the D5 and F5 squares and gives the knight at G1 another square. Now for black it would seem that E5 would be just as attractive. But in chess just as in life, one should consider other nonconforming idea's when one is behind in development such as the tactical C5! At first glance one would question why? It does nothing to free the major pieces, has no immeditate promise of attack and only controls one central square. Why? Because of the tactical positions that will equalize the advantage of having the first move. Of course this is not a lesson in the art of chess openings, but a lesson in nonconformity.
