When I went to school in Alabama I knew nothing about snakes. I don't think I had ever seen a real one at the time. We used to play soccer in and open field that was surrounded with bush. Whenever the ball went out of bounds I would freely run in the brush and get the ball. I notice that none of the other guys, even the other West Indian guys, would go and get the ball. Finally a friend of mine asked me if I was not afraid of snakes. I told him, "yes, of course." so he replied "well, why the hell you run in the bush fearlessly?" It did not take long for me to get the drift. After that all the guys would use a stick to beat the bush before going to retrieve the ball.
A few years later when I told my mother this story she said the same thing happened to her when she went to school in N. Carolina. She liked to take short cuts thru the field and was always wondering why all the students took the long way around until someone told her about snakes.
One of my professors, Dr. Blackwood used to collect road kill rattle snakes and salted and saved them. At the end of the year he would throw a picnic for the senior class and everone was invited to eat a piece of snake meat. It taste like saltfish. ????

RECIPE

HALWA INGREDIENTS
1 Cup Semolina
1½ - 2 Cup Sugar
3-4 Cups Water
1 tablespoon Lemon Juice
1 pinch of Saffron
8-10 Cardamom
50grm Unsalted Butter or Ghee
2-3 tablespoon of oil
1 handful Pistachios & Almonds
1 handful sliced Coconut

HALWA METHOD
1. Crush half of the cardamoms pods and discard the shells
2. Add the cardamom seeds, water, sugar, lemon juice & saffron in a pan & mix well
3. Heat till it boils and then simmer on low heat
4. Heat a non stick wok
5. Add butter and oil and remainder cardamom
6. Next add the semolina and fry till it turns a nice light brown colour – keep stirring and make sure the semolina does not burn
7. Add the syrup to the mixture, keep stirring, add the coconut & nuts
8. Cook till the halwa has absorbed all the moisture and is coming together
9. Once the halwa is to your desired consistency remove to serving dish and sprinkle with a few nuts

PURI INGREDIENTS
2 Cup Pillsbury Atta
Water to knead
Oil to deep fry

PURI METHOD
1. Add enough water to atta to make a soft dough
2. Leave to stand for 10-15 minutes
3. Heat oil in a wok
4. Take a ping pong size dough ball
5. Roll out using oil - do not use any flour
6. Add to hot oil
7. After 5-10 seconds press down with a slotted spoon n the puri will puff up
8. Fry till cooked thru
9. Remove and serve immediately

CHANA INGREDIENTS
2 Tin of pre boiled Chickpeas
½ Can Tomato Tin
1 teaspoon Tomato Paste
1 tablespoon Ginger Garlic Paste
1 White Onion - Chopped
1 Red Onion – thickly sliced
1 tablespoon Cumin Seeds
1 teaspoon Mustard Seeds
1 tablespoon Chilli Flakes
2-3 Star anise
2-3 Cinnamon Stick
8-10 Cloves
6-8 Whole Black Pepper Corns
2-3 Whole Black Cardamom
3-4 Bay leaves
3 tablespoons of Dry Fried Onions
1 teaspoon Chilli Powder
2 tablespoon Mango powder
½ teaspoon Turmeric Powder
1 Handful of Coriander leaves
4-5 Fresh Green Chillies
Salt to taste

METHOD FOR CHANA
1. Heat oil in a non stick wok
2. Add ginger/garlic paste and cook for 1-2 minutes
3. Add the chopped white onions, cumin, mustard seeds, chilli flakes, star anise, cinnamon stick, cloves, black peppers, bay leaves, dry fried onions, red chilli powder, mango powder and fry for a few minutes
4. Next add pre-boiled chickpeas and cook for a few minutes and then add tinned tomatoes and the tomato paste
5. Next add turmeric powder and salt and cook for a bit
6. Add thickly chopped red onion followed by whole green chilli
7. Lastly add freshly chopped coriander leaves and remove off the heat
