new quick lunch idea that i just invented.

4 oz German Spatzle
4 oz ground beef
1 egg
1 cup of fresh salsa
Asiago cheese
garlic
sea salt
fresh ground pepper

Boil water and cook Spatzle per directions
Drain and set aside
Cook 4 oz ground beef in small omelet pan
Add salt, pepper and garlic to taste (i like lots of garlic)
Drain and set aside
Degrease pan and add 1 tbsp butter
Fry egg and scramble it.
While still very runny add ground beef to egg
Stir fry them them together
Fold in spatzle. Add more butter if you want
Fold in salsa
Stir fry a little longer
add more garlic, salt and pepper as needed. (never too much garlic)
Slide onto a plate or bowl
Grate fresh asiago cheese on top
Eat

This is a very small amount of food, but trust me when i tell you a big guy like me has trouble eating all this. Spatzel is very dense.

Wabash Valley Youth in Action, Inc. (formerly the Wabash Valley YMCA) “Bill Mundy Memorial 4-person Golf Scramble” will be held Friday, May 24, 2013 at the Mt. Carmel Municipal Golf Course.
The annual golf scramble is held in honor of the late Bill Mundy. Bill was an avid golfer who served on the YMCA board, and even though our name has changed, our goals and purpose have remained the same. Mr. Mundy’s family is proud to support our organization’s new name and would like to continue the tradition of the golf scramble. Bill Mundy organized the first golf benefit many years ago. He was a good friend and great supporter of our organization by investing many volunteer hours to make a difference in the community. The Wabash Valley Youth in Action, Inc. is honored to host this event in memory of such a wonderful man.

The entry fee is $50.00 per person, or $200.00 per team. Teams will consist of four people. They may be all men, all women, or co-ed. Teams may organize on their own, or individuals may register at the Pro Shop to be assigned to a team.

Prizes will be awarded.

Lunch will be at 12:00p, followed by a shotgun start at 1:00 p.m.
Registration forms are available at Wabash Valley Youth in Action, Inc. office (located at 400 Market St, inside Old National Bank) or at the Mt. Carmel Golf Course Pro Shop (400 Park Rd.). For more information contact Susan Zimmerman at Wabash Valley Youth in Action 618-263-4230.

Waihi 1- 3 Unicol
Waihi started the 2013 season with a home defeat to Unicol.
Both teams started brightly and created chances but it was the visitors who took the lead early in the first half after a goal mouth scramble, the ball finally ending in the back of the net off of the Waihi keeper. Waihi rallied and had a couple of near misses only for Unicol to hit them on the break and spring Waihi’s offside trap and loop the ball over the stranded keeper, the call’s for offside were waved away by the referee. The half time score line stayed 2-0.

In the second half, Waihi went looking to halve the deficit straight from the restart but the visitor’s defence was to strong. Unicol extended their lead, still further, mid-way through the half, again, with a suspicion of offside. Both sides’ continued to push for more goals and the visitors were denied on several occasions by some good goal keeping from the Waihi keeper. Waihi’s pressure finally lead to a goal after Richard James was fouled in the area, the resultant spot kick was converted by Glenn Read. The score remained 3-1 to Unicol.
Next Saturday Waihi host Te Awamutu at Morgan Park; kick off 2:45pm.
The Sterling Player of the day went to Kegan Burrell.
Super Liquor Fair player award went to Ben Grant.
The match ball sponsor was Kimberley Tool and Design.
