The Indian omelet is really not an omelet. Or is it?
It certainly could have existed in India longer than the US has existed as the nation we know.
Good omelets are to be found readily in all Indian metropolises. Good Indian omelets are even more ubiquitous across this nation.
Are some omelets more equal than others?
Could 1.2 Billion people in India and the South Asians who add to hundreds of million more - claim their right over defining what an omelet ought to be in its updated definition?
That could be a debate which would entail arguments even more heated than the heat needed to prepare at least the classic omelet.
Being a fan of eggs, I am personally biased towards scrambled eggs. I love them very moist and barely set. The preparation of this lends itself perfectly to the enjoyment of an egg, its color, taste, texture and scent.
An omelet is easily mediocre in many a hand. Begging to be undercooked, seasoned correctly or handled with care. But when done right - it is happily a dish of amazing poetic taste and comfort.
The Indian omelet is much more forgiving and in a league of its own. If you are wanting a classic omelet, look further and not here. But if you want seasoned and aromatic eggy flavor with deeply comforting taste - this is your indulgence.
This morning mom ate hers with a buttered toast and I enjoyed mine between slices of white bread.
Heavenly morsels laced my moth and sated my taste-buds.
The accompanying Alfonso Mango milkshake was lusciously simple and grand at the same time. Life seemed richer because of this simple drink.
Eggss, tomatoes, red onions, cilantro and green chiles are the main ingredients celebrated in the Indian omelet.
How cold one not love this omelet then?
